Gog told Allison she’d only give her seven minutes. Allison was trying to keep her in reserve so she’d be available when bigger threats show up. Whether or not that was a sensible decision remains to be seen.
If you have a weapon that can annihilate all enemies on the battlefield but can only used once, I think you should wait until all enemies are (presumably) present. Of course, maybe the optimal time might have been when Jagganoth arrives. But by then there might have been no one left. So I think it was a sensible time to call Gog. Also, I think Jagganoth will and can not be defeated by pure force.
Is there any reason to think that Jagger could resist being Gog-infected? It doesn’t seem to result in biological death, more like ego death. May the good guys should have just performed a holding action until the red bubble opens up.
Gog has been physically persisting through countless resets. I think if she could get away with stealing the invulnerable immortal body, she would have done it already and we wouldn’t be in this mess but indeed in a far, far worse, messier, smellier one.
If they could, they would have done so when she fought at Rayuba. Also, Jagganoth is portrayed as someone that can only be subdued by the combined force of the other demiurges. But I give that Gog perhaps could subdue all of them but is simply too bored.

Jaggys angel feathers make him impervious to physical harm, presumably this also makes him immune to Gogs physical body changes with the worms
