As for the minion/acolyte/follower, it’s not known whether the minions are part of a hive mind of sorts with each individual being a part of Gog-Agog or whether they’re individuals who joined Gog-Agogs service and were given the same abilities.
I guess it’s a bit more of a practical matter for the readers benefit since readers would know what poker or blackjack is and would get the scene in context and not some made up game called garthwurg or whatever.
As for creating one rather than using an existing card game, maybe they have tried others and Allison just wanted to try something different and/or try one she had more experience with.

I wouldn’t be surprised if the Worm Queen is able to shapeshift to look like a minion, but we don’t know the limitations of the shapeshifting.
As for the minion/acolyte/follower, it’s not known whether the minions are part of a hive mind of sorts with each individual being a part of Gog-Agog or whether they’re individuals who joined Gog-Agogs service and were given the same abilities.
